(Pinot Gris is a white variant-clone of Pinot Noir. In most parts of the world the variety is made as a simple, dry quaffing white wine Pinot Grigio, as it is known in Italy).

Wine Making

Ashwood Estate carefully handpicks the fruit at optimum ripeness and allows 12 hours skin contact before gently pressing. Half the free run was fermented in chilled stainless steel tanks and the other half in German oak ovals. The wine was then bottled after eight months of bulk maturation in the oak ovals.
